A new restaurant featuring a greenhouse filled with flora and fauna has opened in Copenhagen’s Latin Quarter.

Called Väkst (Danish for ‘growth’), the Secret Garden-esque eatery was designed by Genbyg – a studio and retailer that specialises in recycled building materials.

‘The theme is urban gardening with an informal atmosphere,’ says the firm. ‘The idea was to create a vivid and organic space – as a garden party.’

At the heart of the two-storey space is a greenhouse packed with suspended plant pots. A feature back wall on the ground floor also has different species of plants stacked on a bookcase. The restaurant’s menu, devised by chef Jonas Christensen, mirrors the space’s emphasis on greens.

‘With Väkst, we have the opportunity to cultivate our preference for vegetables and create rustic, social meals, which fits with garden parties,’ says Christensen. ‘Simultaneously, we have not forgotten the details or the pleasure of surprising and treating our guests.’

Väkst is the 13th restaurant opening from Cofoco, a Copenhagen-based hospitality group.
